Inspired by National Vegetarian Month Cal Poly Dining launched Meatless Monday at the 19 Metro Station this past October.

Meatless Monday is a global non-profit initiative that follows the simple notion of, “Once a week, cut the meat.”

Megan Coats, a registered dietitian and sustainability coordinator of Campus Dining, says there are health and economic benefits students gain from just cutting their meat consumption once a week.
